Fresh + Light Sesame Cucumber Salad

Refreshing, crunchy and light! This salad perfect for warm days sitting outside in the park, by the pool or at a BBQ. The best part is it can be made ahead and served the following day.

Fresh + Light Sesame Cucumber Salad


INGREDIENTS

  • 1 large cucumber
  • 1/4 small red onion
  • 1 tbsp apple cider or rice wine vinegar
  • 1 tbsp sesame oil
  • 1 teaspoon sea salt
  • 1/2 tbsp honey
  • 1 tbsp sesame seeds
  • Optional: 3 tbsp chopped, fresh cilantro
  • Optional: 2 tbsp red chilli flakes

DIRECTIONS

  1. Thinly slice the cucumber and red onion (use a mandolin if you have one) and add to a bowl.
  2. Make the dressing by warming the honey so it is liquid. Add honey, vinegar, sesame oil, sea salt and sesame seeds to a small bowl and combine.
  3. Add dressing to cucumbers and combine well.
  4. Top with optional cilantro and red chilli flakes.
  5. Enjoy right away or refrigerate for up to 2 days.
