Healthy Gingerbread Brownie Bars - Gluten, Grain, Dairy-free

These bars are perfect for the holiday season! Delicious enough to bring to a holiday party and healthy enough to keep your sweet tooth under control. These freeze really well so they're great to have on hand satisfy all your holiday gingerbread cravings.

Healthy Gingerbread Brownie Bars

GLUTEN, GRAIN, DAIRY-FREE

Ingredients

  • 1/2 cup Dates

  • 1/4 cup maple syrup OR granulated monk fruit or stevia sweetener

  • 3 Eggs

  • 2 2/3 tbsp Molasses

  • 1/2 cup coconut oil or almond butter

  • 2 tsp Vanilla Extract

  • 1 cup Unsweetened Almond Milk

  • 1/2 cup Coconut Flour

  • 1/4 cup Cocoa Powder

  • 2 tsp Ground Ginger

  • 1/4 tsp Ground Cloves

  • 1 tsp Baking Soda

  • 3/4 tsp Baking Powder

  • 1/2 tsp Sea Salt

  • Optional - chopped nuts or shredded for topping

Directions

  1. Preheat the oven to 350ΒΊF.

  2. Add the dates, coconut oil, molasses and vanilla to a food processor or blender and pulse until combined.

  3. Add the eggs to the wet ingredients and process slowly until combined.

  4. Add the coconut flour, ginger, cinnamon, cloves, salt, baking soda and powder, and salt to the wet ingredients. Process until combined well and resembles a smooth batter.

  5. Pour the batter into the lined or greased 9x9 baking dish. Top with nuts or shredded coconut if desired.

  6. Bake for 30 minutes until top is firm to the touch.

  7. Let cool completely before slicing the bars.

  8. Store in a container in the fridge for up to a week or in the freezer to enjoy later.
